What does the kitchen look like?

As you can see on the groundplan, part A, there is (just) one kitchen in the entire hotel. Banqueting as well as the restaurant (150 seats), lobby (bar) and terrace are served from this facility. The kitchen it self, seems well equipped and suited for its tasks.

Spending on food and beverage

The operating review shows that food and beverage account for almost a quarter of the total hotel revenues. In banqueting and other revenues (with 8%), obviously, catering plays an important role as well. The price of a room, always includes breakfast and is considered to cost the hotel on average € 10 per room (!) per night. This cannot be left out of the room price and is not considered to be part of food and beverage spending.

Apart from this, on average a (weekend) day brings in an additional € 20 per person per night on food and beverage. So, at 1.7 people per room per night, on average € 37 per night is spent on dinner, bar, etc. This is totally separate from the room price. This depends largely on the type of guest, the season and the number of people in the room. This calculation is based on weekdays, so mainly leisure guests.
